Detox Soup

Detox Soup

 Ingredients 

(Serves -8)

One tablespoon of olive oil

One leek, thinly sliced

One onion, finely chopped

Two cups vegetable stock and three cups water

420g can chopped tomatoes

One carrot, peeled and cut into cubes

500g pumpkin, cut into cubes 

Half a celery, chopped

One broccoli head, steamed

METHOD

1. Heat the olive oil with onion in a large saucepan. 

2. Add the leek and gently cook over a low heat until soft, then add the stock, tomatoes, carrot and pumpkin.

3. Bring to the boil, reduce the heat and simmer for 10 minutes.

4. Top with steamed broccoli and add shaved Parmesan to serve.

How to eat better at home & Work from Home

 Whether you struggle with overeating or resisting the urge for sugary snacks, temptation is always around the corner. So, why not set yourself a tough but rewarding resolution this July. I have put together some tips on how to keep a better-balanced diet at home, to help really give a boost to your health this month.

1. Don’t work in or near the kitchen

Try to arrange your workspace away from the kitchen, or at least out of sight of the fridge. This will help to avoid temptation and the constant desire to visit the snack cupboard. Try to stick to your scheduled meal times and only go to the kitchen or fridge at these times.

2. Plan your snack and mealtime

Plan your meals the same way you would plan the rest of your day - wake-up, workout, work and sleep. When working from an office we wouldn't be eating all day - so have a plan whilst working from home. Set a time where you will have breakfast, lunch, dinner & snacks, to help reduce over-eating.

3. Prepare your lunches

Being at home, it can feel liberating to have the freedom of eating what we want, not to mention not queuing for the microwave at work. For some people, this freedom can be too much especially when it comes to weekday lunches, and we can be tempted into some unhealthy food choices. Try to prepare your meals the night before - even if you stick to basics such as salad, pre-cut vegetables, grilled chicken or fish and nuts. Alternatively, why not try a veggie omelette, but pre-cut the vegetables beforehand so it is quick to prepare at lunchtime.

4. Drink plenty of water

Dehydration can commonly lead to over-eating, fatigue and a lack of ability to focus. All the vital components you need to be able to work well. Keep a large water container near you on your desk and take regular sips throughout the day. Try to aim for at least 2-3 litres every day.

5. Focus on real foods

Nutritional, balanced food will give you more energy, lift your mood and keep you focussed for longer. Avoid processed foods and try to stick to whole grain carbohydrates, protein, fibre, healthy fats, fruit and vegetables. Although obvious, avoid snacking on chocolates and other junk foods. Buy fresh and keep your macro's in mind. Depending on your goal, we would recommend your daily food consumption to comprise of the following macros; 40-60% carbohydrates, 20-35% protein and 20-35% healthy fats.

6. Don't buy junk food

The best way to stop the urge to go to the snack cupboard is to prevent yourself from buying it in the first place. If it is not in your kitchen, you won’t eat it! Take special care with foods which you know trigger binges for you. Out of sight, out of mind is the golden rule!

7. When you eat, just eat

The temptation to sit by your desk and eat your lunch can be high, but we recommend avoiding this if you can. Take a seat at your table and take a few minutes and have a break - this will lead to better satisfaction of your meal and reduce the want to overeat. It will also give you a well-earned break to re-gain focus for the rest of your day.

 The donkey told the tiger: 

′′The grass is blue". 

The tiger replied: 

′′No, the grass is green".


The discussion became heated up, and the two decided to submit the issue to arbitration, and to do so they approached the lion, King of the Jungle. 


Before reaching the clearing in the forest where the lion was sitting on his throne, the donkey started screaming:

′′Your Highness, is it true that grass is blue?".

The lion replied:

"True, the grass is blue". 


The donkey rushed forward and continued: 

′′The tiger disagrees with me and contradicts me and annoys me please punish him".

The king then declared:

′′The tiger will be punished with 5 years of silence".


The donkey jumped for joy and went on his way, content and repeating:

′′The grass is blue"...


The tiger accepted his punishment, but he asked the lion:

′′Your Majesty, why have you punished me, after all, the grass is green?"

The lion replied:

′′In fact, the grass is green".

The tiger asked:

′′So why do you punish me?"

The lion replied:

′′That has nothing to do with the question of whether the grass is blue or green. The punishment is because the worst waste of time is arguing with the fool and fanatic who doesn't care about truth or reality, but only the victory of their beliefs and illusions.

Hariyali Chicken

Ingredients For marination: 

  • 750 gms chicken 
  • 3 tbsp yoghurt 
  • ½ tsp turmeric powder 
  • ½ tsp pepper powder 
  • 1 tsp ginger-garlic paste 
  • Salt as required 

The bright green colour of the Hariyali chicken dish is quite striking. Made with fresh herbs, aromatics and spices, the Hariyali chicken tastes perfect with chapathi, roti, naan or fried rice.



For gravy: 

  • 2 tbsp oil 
  • ¼ tsp cumin 
  • 1 onion, 
  • 5-7 green chilies, 
  • 2 cardamom pods (grind into a paste) 
  • ½ tsp ginger-garlic paste 
  • 1 tsp coriander powder 
  • ¼ tsp turmeric powder 
  • ½ tsp garam masala 
  • Coriander leaves, mint leaves 
  • 10 soaked cashews (grind together to make the green paste)
  •  ½ cup milk/fresh cream 
  • Salt as required
Method 

  • Marinate the chicken pieces with yoghurt, turmeric powder, pepper powder, ginger-garlic paste and salt 
  • Keep the marinated chicken in the fridge for at least half an hour You could even keep it overnight as well 
  • Heat oil in a pan and splutter the cumin seeds Sauté the onion-green chilli paste
  • Add the ginger-garlic paste after 2 minutes Sauté for at least 10-12 minutes until the oil begins to separate Into it add coriander powder, garam masala and turmeric powder Sauté until the raw smell of the powders is gone.
  • Now add the marinated chicken Mix well Cook for 20-25 minutes with the lid on Add the green paste after the chicken pieces have cooked well 
  • Cook on low flame for 5 minutes with the lid on
  •  Add the milk or fresh cream 
  • Cook the gravy for a minute on low fame 
  • Do not allow the gravy to boil rapidly
  • Note: Adding the green paste as the last step would give the curry its signature green colour. You could sauté the green paste along with the onion paste; however, the gravy would be darker in colour.

  9. കറിവേപ്പില,എണ്ണ,കടുക് ,ഉപ്പ്,വെള്ളം -ആവശ്യത്തിന്
  10. തയ്യാറാക്കുന്ന വിധം
  11. തേങ്ങാ ചിരകിയതിൽ അൽപ്പം മഞ്ഞൾപ്പൊടിയും കുഞ്ഞുള്ളിയും ജീരകവും ചേർത്ത് നന്നായി അരച്ച് വെക്കുക. തൈര് മിക്സിയിൽ നന്നായി അടിച്ചു വെക്കുക.കുമ്പളങ്ങ കഷ്ണങ്ങൾ പച്ചമുളകും മഞ്ഞൾപ്പൊടിയും ഉപ്പും കുറച്ചു വെള്ളവും ചേർത്ത് അടച്ചു വേവിക്കുക.

തയ്യാറാക്കുന്ന വിധം

കഷ്ണങ്ങൾ വെന്ത ശേഷം ഇതിലേക്ക് അരപ്പു ചേർത്ത് നന്നായി ഇളക്കുക. ശേഷം തൈര് ചേർത്ത് ചൂടാക്കി വാങ്ങുക. തിളക്കാൻ പാടില്ല.അൽപ്പം ഉലുവാപ്പൊടിയും ചേർത്തിളക്കുക. കടുക് വറുത്തു താളിക്കാം. ഉലുവപ്പൊടിക്ക് പകരം കടുക് വറുക്കുന്നതിന്റെ കൂടെ ഉലുവ ചേർത്താലും മതിയാകും. ഇത്രയുമായാൽ രുചിയുള്ള പുളിശ്ശേരി റെഡി.

പെസഹ അപ്പവും തേങ്ങാപ്പാലും

ചേരുവകൾ


  1. അരിപ്പൊടി: 2 കപ്പ് (വറുത്തത്)
  2. തേങ്ങ ചിരകിയത് : ഒന്നേകാൽ കപ്പ്
  3. ഉഴുന്ന് : ഒരു പിടി (വെള്ളത്തിൽ കുതിർക്കണം)
  4. ചുവന്നുള്ളി : 5-6
  5. വെളുത്തുള്ളി - 2 അല്ലി
  6. ജീരകം - കാൽ സ്പൂൺ
  7. ഉപ്പ് - ആവശ്യത്തിന്
  8. വെള്ളം - ആവശ്യത്തിന്

തയ്യാറാക്കുന്ന വിധം

ആദ്യം തന്നെ വെള്ളത്തിൽ കുതിർത്ത ഉഴുന്ന് ആവശ്യത്തിന് വെള്ളം ചേർത്ത് നന്നായി അരച്ചെടുക്കുക്കണം. ഇതിന് പുറമേ ചിരകിയ തേങ്ങയും ജീരകവും പരുക്കനായി വേറെ തന്നെ അരച്ചെടുക്കണം. ചുവന്നുള്ളിയും വെളുത്തുള്ളിയും ഇതുപോലെ വേറെത്തന്നെ അരച്ച് കുഴമ്പുരൂപത്തിലാക്കണം. പിന്നീട് ഒരു വലിയ പാത്രത്തിൽ അരിപ്പൊടിയെടുത്ത് ഇതിലേക്ക് അരച്ച് വച്ച ഉഴുന്നും തേങ്ങയും ചുവന്നുള്ളി- വെളുത്തുളളി പേസ്റ്റും ആവശ്യത്തിന് വെള്ളവും ചേർത്ത് കുഴച്ചെടുക്കുക. അടയും മറ്റും ഉണ്ടാക്കുന്നതിനായി ഉരുളകളാക്കാവുന്നതുപോലെ കുഴച്ചാൽ മതിയാവും. (ചിലയിടങ്ങളിൽ കുഴമ്പ് രീപത്തിലാക്കിയ ശേഷം അപ്പച്ചെമ്പിൽ പാത്രത്തിൽ വേവിച്ചെടുക്കാറുണ്ട്. ) ഈ കൂട്ട് മൂന്ന് മണിക്കൂറെങ്കിലും വയ്ക്കാം. ശേഷം മാവ് ഉരുളകളാക്കി ചെറിയ വാഴയിലകളിൽ പരത്തിയ ശേഷം വാഴയില മടക്കി. അപ്പച്ചെമ്പിന്റെ തട്ടിൽ വച്ച് വേവിക്കാം. ഇതിന്റെ മുകളിലായി കുരുത്തോല കൊണ്ട് കുരിശ് ഉണ്ടാക്കി വക്കാം. ഇത് പതിനഞ്ച് മിനിട്ട് ആവിയിൽ വേവിച്ചെടുക്കുക. പെസഹാ അപ്പം തയ്യാർ.

തേങ്ങാ പാലിന്

  1. തേങ്ങ - മൂന്ന്
  2. ശർക്കര - ഒരുകിലോ
  3. ഏലയ്ക്ക - 10
  4. ചുക്ക് - ഒരിഞ്ചിന്റെ രണ്ടു കഷണം
  5. ജീരകം - ഒരു ചെറിയ സ്പൂൺ
  6. ഉപ്പ് - ആവശ്യത്തിന്

തയ്യാറാക്കുന്ന വിധം 

തേങ്ങ നന്നായി അരച്ചു പിഴിഞ്ഞു തേങ്ങാപ്പാൽ എടുക്കുക. പാലിൽ, ശർക്കര ഉരുക്കിയ പാനി അരിച്ചതും ചുക്കും ജീരകവും ഏലയ്ക്കാപ്പൊടിയും ഉപ്പും ചേർത്ത് അടുപ്പിൽ വച്ചിളക്കി കുറുക്കി വാങ്ങുക. തയാറാക്കിയ അപ്പം ചെറിയ കഷണങ്ങളാക്കി മുറിച്ച് പാലിൽ മുക്കി കഴിക്കാം.


Subway®-style Italian Herb & Cheese Bread

Makes: 4 Footlong rolls 
  • Preparation Time: 1 hour 5 minutes                                                       
  • Resting Time: 1 hour 
  • Cooking Time: 25 minutes 
  • Total Time: 2 hours 30 minutes

INGREDIENTS 

For the bread: 
•  500g strong white bread flour 
•  10g quick action yeast 
•  20g caster sugar 
•  8g salt 
•  80ml olive oil 
•  320ml water - lukewarm 
•  Plain flour, for dusting 
•  2 tbsp milk, for glazing plain loaves 
•  1 medium egg, beaten, for glazing herb and cheese loaves

For the Italian Herb and Cheese Topping: 
•  1 tbsp dried Italian herbs 
•  1 tbsp Parmesan cheese, dried 
•  ½ tsp garlic granules 
•  ½ tsp onion powder 
•  30g mozzarella, grated

METHOD 

  • In a large bowl, combine the flour, yeast, sugar, and salt, ensuring the yeast is not touching the salt and sugar.
  • In a jug, combine the water and oil, whisking to combine.
  • Pour ¾ of the water/oil mixture over the dry ingredients, and using a wooden spoon or cutlery knife, mix to evenly hydrate the dry ingredients. 
  • Add the remaining water and oil as needed to achieve a soft dough.
👉Tip the dough out onto a lightly floured bench, and knead until smooth and elastic – this should take about 10 minutes. The dough is ready when it bounces straight back when gently pressed. 

  • Place the dough into a large, lightly oiled bowl, cover with a damp tea towel, and leave in a warm place until doubled in size.
  • Once risen, turn the dough out onto a lightly floured surface and divide into 4 equal pieces. 
  • Take one piece, and roll into a long skinny loaf, about 12-inches long. Place on the lined baking tray and repeat with the remaining pieces of dough, allowing at least 5cm between each loaf. 
  • Cover with a lightly oiled piece of cling film, and set aside for 1 hour.
  • 💥Heat the oven to 200°C / 180 Fan / Gas Mark 6.💥
  • While the loaves prove, make the topping. In a small bowl, combine the mixed herbs, dried parmesan cheese, garlic granules, onion powder, and salt.
  • For a plain loaf, when the bread is almost ready, gently brush evenly with milk, being careful not to deflate the loaves.
  • For an Italian Herb and Cheese loaf, omit the milk, and instead gently brush the rolls with egg wash. Sprinkle with the herb topping, followed by a little of each cheese.
  • Bake in the centre of the oven for 25 minutes until golden. Transfer to a cooling rack and cool completely before slicing.
👉TIP – The rolls are best enjoyed on the day they are baked. However, they can also be frozen after baking. Simply defrost, and refresh in a warm oven for 5 minutes before filling.

Russian Hot Chocolate

Serves 2

Enough of your milk of choice to fill two mugs (I use semi skimmed organic cows milk) 

  1. 1 fresh red chilli
  2. 50g of fairtrade dark chocolate
  3. 1 tsp ground cinnamon
  4. 1 tsp honey
  5. 1 pinch ground ginger
  6. Entirely optional – a pinch of vanilla infused sea 

Please  microwave to melt the chocolate or  just grate the chocolate and chuck it straight into the warm milk (it will just take a little bit longer to dissolve). I have included two methods here – one for chilli fiends and one that is a little more restrained.

Method 1 - 😋Delicately warming😋
Make two incisions down the sides of your red chilli but not enough to cut it in half or expose the seeds. Put the chilli, milk and spices into a pan and warm gently for five minutes. Melt the chocolate in the microwave on a low heat. Add the honey and melted chocolate to the milk and heat gently for another ten minutes until the milk thickens slightly. Remove the chilli before serving.

Method 2 – 💥Seriously spicy💥
Cut the chilli in half and remove the seeds. Put one chilli half and all of the milk and spices into a pan and warm gently for five minutes. Melt the chocolate in the microwave on a low heat. Remove the chilli from the milk. Add in the honey and melted chocolate and heat gently for another ten minutes until the milk thickens slightly.

Finding Watch

Once there was a farmer who discovered that he had lost his watch in the farm. It was not an ordinary watch because it had sentimental value for him.

After searching the hay for a long while, he gave up and call the help of a group of children playing outside the barn.

He promised them that, the person who found it, would be rewarded.

Hearing this, the children hurried inside the barn, went through and around the hay but still could not find the watch. Just when the farmer was about to give up looking for his watch, a little boy went up to him and asked to be given another chance.The farmer lookedat him and thought, “Why not.? After all, this kid looks sincere enough.”

So the farmer sent the little boy back in the barn. After a while the little boy came out with the watch in his hand.

The farmer was happy and surprised and so he asked the boy how he succeeded where the rest had failed.

The boy replied, “I did nothing but sit on the ground and listen. In the silence, I heard the ticking of the watch and just looked for it in that direction.”
